CSA #2: Sweet Potato as Far as the Eye Can See

I think we did pretty well on our first CSA box, all things considered. Out of the whole box, all we had left by the end of the week was half a bunch of radishes, a small head of broccoli, and a bunch of bok choy. We managed to eat all the rest, including about fifty pounds of turnips.

Fortunately, the kids were just as excited to go get their Vegetable Surprise Box this week. My four-year-old insisted on trying to carry it to the car himself while his little sister helpfully put a hand on it so that she could be a part of the event.

Here’s what we got this week:

  • Collard greens
  • Broccoli
  • Kale – holy crap, huge bag
  • Rutabaga greens – didn’t know this was a thing, tastes kind of cabbage-y
  • Radishes
  • Spring onions – red AND white this time
  • Giant fucking bag of sweet potatoes

We now have enough broccoli to do something with, so I’ll probably roast that soon. The rutabaga greens taste pretty good raw, so I think I’ll throw them into a salad with some of the kale and the radishes and radish greens. That ought to be enough greens for a salad every day until the next box arrives. I’m going to stir fry the collards with the leftover bok choy, and I’ll toss the spring onions into everything.

That just leaves the giant fucking bag of sweet potatoes. What the hell do you even do with 8+ pounds of purple sweet potatoes? Good thing they keep well.
